Macarons




I love to make macaroons. They are my  favorite cookie to make because they are so elegant and cute. I wont lie to you they are the hardest desserts that I have ever made .Then again I am a perfectionist lol. ≧◡≦ But anyways after so many times making them  I have gotten to a point were I can say that I can make macarons.(●´ω`●) If I can make them I am one hundred percent sure that you all can make them. So lets stop talking and lets start baking !!!!!!!!(●≧▽≦●)








Macaroon Sandwiches 
Ingredients: for macarons
2/3 cup of almond meal (or almonds that you have previously grind)
1 1/2 cups of powered sugar(plus more for dusting)
3 egg whites at room temperature
5 tablespoons of caster sugar
1 teaspoon of vanilla extract
1/4 teaspoon of cream of tartar
pink food coloring (or coloring of your choice)

Ingredients: for decorating
20 raspberries (5 on each macaroon sandwich)
3 cups of heavy cream (this whipped cream will be used for both  the macaroon sandwiches and for the Pink Polka Doted  Deco roll cake )
1 1/2 cups of powdered sugar (plus more for dusting)
4 strawberries sliced in half (1 strawberry on each macaroon sandwich)

How to make it: macarons
Step 1: Sift 2/3 cup of almond meal with the 1/2 cups of powdered sugar.
Step 2: In a bowl pour in the  3 egg whites at room temperature, the 1 teaspoon of vanilla extract, and  the 1/4 teaspoon of cream of tartar. Using an electric mixer mix this on medium speed. One it has a  bit of bubbles start to add the 5 tablespoons of caster sugar little by little.Once it looks white add your food coloring. Add as much as you want until you get your desired color. Remember to make the color just a bit darker because when macarons bake they lose a bit of their color. Increase the speed to 7 (or medium to high speed if you have a hand mixer). You should achieve stiff peaks.
Step 3: Fold in the powdered sugar and almond meal mixture to the  meringue . ( This part can be a bit tricky but don't worry my friends)(づ。◕‿‿◕。)づ Fold the mixture until you have no more clumps. Try not to break to much of the air bubbles or else your macarons will not rise. Pick up the spatula and if the batter runs down like molten lava it should be ready.
Step 4: Pipe your macarons and then leave them on the counter for  about an hour to create a dry layer on the top.
This will help to avoid cracking when baking
Then touch the macarons and if it isn't sticky then you are ready to bake.

Step 5: Bake them on 320 F for 20 minutes.


How to make it: Decorating


Step 1: Place five raspberries on a macaron each a bit separated from each other.

Step 2: Then pipe some whip cream on the empty spaces. Pipe some whip cream on top of the raspberries and the macaroon. Place another macaron on top.

Step 3: Finally pipe a bit of whip cream on the top of the sandwich cookie. Place the two slices of strawberry on and one raspberry in the middle. Sprinkle some powdered sugar.
